If you love mushrooms, you will definitely want to keep your favorite types of mushrooms in season. Then freeze them until you’re ready to use them in all of your favorite dishes, and make sure you don’t waste any if you have one. Choose mushrooms that look and smell fresh. Dry, darkened, and moldy fungi, shriveled, stained or unpleasant odor should be avoided. Only freeze mushrooms that are in good condition.
Mushrooms stay fresh when you keep them in the freezer. Fresh mushrooms have a stiff texture and give a good smell and they are free of spongy or dark spots. Sometimes the best place to buy fresh mushrooms is in your hometown, but you can also look for locally grown mushrooms at your grocery or Mushroom Super Store.
Before freezing the mushrooms, you must first remove the visible dirt. Most people are used to washing mushrooms before freezing them and this tends to make them squishy when cooked. If you choose to freeze raw mushrooms, cut the stems and put them in a plastic freezer bag. Remove as much air as you can before sealing the bag and putting it in the freezer. - Steam bleaching is a quick cooking process that helps preserve before being frozen. It works by destroying enzymes that can increase how quickly food spoils.
- Steam bleaching helps preserve nutrients. Bleaching times are different for each mushroom, as it depends on the size of the mushroom, so it is a good idea to cut them into small sizes before steaming.
- To prevent discoloration during the whitening process, first, soak the fresh mushrooms in a solution of water and lemon juice for 5 to 10 minutes.
- To blanch the steam, the mushrooms, take a pot of boiling water and put a steam basket inside.
Add the mushrooms to the basket and let them steam for 3 to 5 minutes.
- Then remove the mushrooms and instantly place them in an ice water bath at the same time as you steamed them.
Strain the water and keep the mushrooms in airtight bags, safe for the freezer, and stock them in the freezer.
Unfreeze the frozen mushroom process:
Most frozen mushrooms are kept in the freezer for 10 to 12 months. Frozen mushrooms are more suitable for foods that will be cooked over a fire, including soups, stews, pizza toppings, casseroles, and more. If you are not cooking or preparing a dish that will cook long enough and thoroughly over the fire, and you are not cooking frozen mushrooms, you can defrost them first to soften them by placing them in the refrigerator overnight.
